The Viognier is picked early to maintain freshness and balance, and enables the wine to deliver lower alcohol than is usual for this grape variety. Delicate and ethereal with subtle hints of apricot, jasmine, spice and honeysuckle. It doesn’t lack depth or intensity yet remains remarkably light on its feet.
The other benefit of early picking is a crisp and balanced acidity to the wine which Viognier can sometimes be lacking in.
There’s nothing ‘trendy’, ‘cutting edge’, ‘edgy’ or ‘pushing the envelope’ cliches at this winery – just a determined, knowledgeable and calculating expertise that produces wines that are elegant, balanced and totally drinkable.

Philip Shaw Wines are a byword for elegance and balance, and totally de-bunk the myth that all Australian wines are just big, just fruit, and just loud!!
Now in their 30th year of production (2019) the wines are produced in the 47 hectare Koomooloo Vineyard in the high altitude cool climate region of Orange. Soil structure is mainly limestone and volcanic rock with red loess top soil blown from Central Australia on the wind. All grapes are hand-sorted and rigorously selected.
