Domaine Jean Marc et Hugues Pavelot
Savigny-les-Beaune Blanc 2017, Domaine Jean Marc et Hugues Pavelot
France / Burgundy
Andy's Tasting Notes
This has poise and style, with terrific minerality, crisp acidity and delicious apple, lime and peach fruit. A vibrant and pure white Burgundy which will continue to improve and develop till 2024.
Good vine age here with half of the vines planted in 1965 – proper old vine stuff!
Approximately 400 cases only are produced annually. Delicate use of oak – a maximum of 25% new oak only is used.
By general consent, one of the best addresses in Savigny. Wine making duties are now mainly
in the hands of Jean Marc’s son, Hugues and the wines from 2017 are firmly fruity with real
terroir character. Dotted around the village there are various inscriptions dating from the 17th
and 18th centuries carved on the walls of houses and one such, on the wall of Domaine
Chandon de Briailles, states that the wines of Savigny are “nourishing, theological and
morbifuge”. This last term apparently means they drive away illness! Be that as it may, the
style of Savigny reds is generally attractively floral with red fruit character and lovely balance
between tannic structure and suppleness – very nourishing indeed.
